Add sonarr/radarr/prowlarr fork repositories 
Create the three arrstack source-fork repos (Postgres + stateless
multi-replica work). No branch protection yet so the initial upstream
mirror can be force-pushed; a follow-up PR adds protection + required
Woodpecker checks once CI exists.
